Small Leaf from Those Very Mountains (Chinese: 正山小种) is an easy-to-brew tea with natural chocolate notes in its aroma.
Premium Xiaozhong differs from the basic variety by the absence of stems and large cut leaves, making its taste cleaner and sweeter, and its aroma brighter.
Aroma: Bright and warm, with hints of baked fruit and chocolate.
Taste: Sweet, with honeyed fruit notes, caramel, and a touch of coffee.
Effect: Warming and invigorating.
Brewing Instructions: Xiaozhongs can be brewed in any tea vessel. Porcelain enhances the aroma, while clay rounds and deepens the flavor. Gongfu brewing (multiple infusions) will reveal several layers of flavor from the same leaves. For a single, more intense flavor, steep the tea directly; it’s time-saving but yields a strong, concentrated taste. Be sure to preheat the vessel before brewing, and use boiling water.
Tip: If you appreciate smoky notes in your Xiaozhong, try the traditional Yan Song Xiaozhong. Smoked over pine charcoal, it has the characteristic smoky aroma and vibrant dried plum flavor.
